You can make great sodas at home. Follow the directions, then add more or less sugar for your own taste. If naturally carbonating the soda use champagne yeast, and after the second or third day in the bottles, every day you should chill one in the fridge and check for carbonation. Just before you think it is right, put it all in the fridge to stop the fermentation. CAUTION--TO MUCH FERMENTATION CAN CAUSE BOTTLES TO EXPLODE. This can be dangerous and messy, also the soda will be less sweet and more alcoholic. Be careful, but the flavor done right is absolutely wonderful. You can even mix sodas for different tastes.
