WE REFRIGERATE ALL OUR GRAINS TO MAKE SURE THEY ARE THE FRESHEST FOR YOUR USE. GRAIN SUPPLIERS SAY TO KEEP THE GRAINS IN A COOL DRY CLIMATE. THE REFRIGERATION TAKES MOISTURE OUT OF THE AIR AND COOLS IT. EVEN IN OUR DESERT CLIMATE THE MOISTURE IS TO HIGH, OF COURSE A SWAMP COOLER MAKES IT WORSE. NOTHING IS TO GOOD FOR OUR CUSTOMERS, IT'S QUALITY BEER, NOT THE MOST PROFIT!!!! GRAINS PROVIDE A LOT OF FLAVOR FOR DIFFERENT STYLE BEERS.  IN ALL GRAIN BREWING THEY ALSO PROVIDE THE SUGAR. FOR EXTRACT BREWERS, THEY  ARE USED TO PRODUCE THE STYLE YOU WANT OR  FLAVOR. IN THE HUSKS OF THE GRAIN ARE  TANNINS JUST LIKE COFFEE OR TEA. THEY ARE ASTRINGENT(PUCKERY BITTERNESS) AND CONSIDERED AN OFF FLAVOR IN BEER. THEY START TO LEACH OUT OF THE GRAINS AT AROUND 170 F. PUT THEM IN COLD BREWING WATER AND TURN ON THE HEAT. USE YOUR THERMOMETER. WHEN THE TEMPERATURE REACHES 155 F TAKE OF THE HEAT(IF ELECTRIC) OR TURN OFF THE HEAT. LET SIT FOR 20 TO 30 MINUTES, STRAIN OUT THE WATER. CAUTION!!! DO NOT TRY TO SQUEEZE THE WATER, FROM THE GRAINS YOU WILL DEFEAT YOUR PURPOSE.  THE TEA REPLACES THE WATER FOR THE BOIL.      FREEZE ALL YOUR CRACKED GRAIN TO KEEP IT FRESH.
