What is a show plate?

What is a "show" plate?

A show plate, also known as a base plate, face plate,  place plate,  service plate,  charger or  trencher,  is exactly what it sounds like -- it's for show. You never eat directly off of the show plate.

Show plates are typically used at fine dining restaurants,  upscale catered events or at formal meals at someone's home.

The purpose of a show plate is to keep the space in front of the diner (known as your "cover") from being empty at any time during the meal.

Generally, all courses before the entrée are served on top of the show plate. When your entrée plate is placed in front of you, the show plate should be removed. Most main course plates are approximately the same size as the show plate and it's not aesthetically pleasing to stack two plates of the same size.

By the way, did you know that the earliest plates were made of stale bread? The stew-like foods that were served softened the bread and diners broke off pieces to eat with the meal. Once they were finished, the household animals were given the remains of the "plates". Great idea -- fewer dishes to wash!
