WE FREEZE HOPS. Hopped malt extracts & kits are bittered. They have more or less bitterness. If you like hop flavor or aroma you will need to add it(see page 22). The viability of the yeast that comes with the cans is questionable. We recommend buying fresh yeast(10 to 14 grams), to protect the time and money invested. Since yeast bud(reproduce), until they reach an optimum population for the given volume and then start to ferment, the fermentation process is what protects your beer,. It is important to get it started quickly, so get fresh yeast, use 2 packages(unless they are 10 to 14 gram packages), rehydrate the yeast in plain water(see page 20), force cool your wort, & oxygenate your wort(after cooling)! Two cans of hopped extract will produce a more bitter beer. Adding unhopped with the hopped extract will give you less bitterness. To bitter your wort yourself see page 22. Using malt extract or grain from the country of the beer you are trying to produce might help produce the style you are shooting for better, but not necessarily. Let your taste buds guide you. Experimenting is really what this hobby is all about, so please experiment. The real bummer is you have to drink all the experiments! Start a log. Keep good notes, including tasting comments. Brands, times, alpha %, HBU's, procedures, & amounts are all important. Most of all have fun! Getting to the point of designing beers, using grain, hops, unhopped malt extract, yeast and water(even adjusting the water), is when it really becomes the most enjoyable!
